Reasons are many. First of all, because these few lines are dedicated to my lovely grandmother Anna, who passed away in May 2018, but at the time of the writing was 96 year old. She was a special woman who, despite the passing of time, has made everything to respect the good habits of the traditional\u00a0<em><strong>&#8220;rezdora&#8221;<\/strong> (<span lang=\"en\">a Modenese word to indicate a sort of &#8220;queen of the house&#8221;)<\/span><\/em><span lang=\"en\">. T<\/span>hen, because I will tell you about <strong>Tortellini<\/strong> (those of my grandmother) a food that Modenese people have written in their DNA and that represents the tradition especially in this festive period \ud83d\ude42<\/p>\n<p><!--more--><\/p>\n<p>I hope to be able to convey at least part of what these lines represent for me, especially since my grandmother has died and I would like to keep her memory alive as much as possible.<\/p>\n<p>In 2015 I wrote:<\/p>\n<blockquote>\n<p id=\"tw-target-text\" class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><span lang=\"en\"><br \/>\nMy grandmother is 96 years old\u00a0and every day that I spent with her\u00a0is a precious gift. Precious it&#8217;s also to see her at work, even if with a great effort and with the massive help of my mother, who makes the &#8220;dirty job&#8221; in these preparations. Now, my\u00a0grandmother is the mind and my mom her\u00a0arm.<br \/>\nI haven&#8217;t really\u00a0taken something from her cooking capacities, I apply myself if it&#8217;s necessary but I haven&#8217;t the habit of rolling out\u00a0the dough, undertaking something I&#8217;m not sure to be able to\u00a0complete (like these 10 eggs of Tortellini ; ) ).<br \/>\nHowever\u00a0I&#8217;ve decided that this time I would be the witness of this preparation in order to learn something, to document it and to <strong>stop the time, spending a special moment,<\/strong> that I want to remember in the future, with my grandmother and my mom.<\/span><\/p>\n<\/blockquote>\n<div class=\"col\">\n<div id=\"center_col\">\n<div id=\"res\" class=\"med\">\n<div id=\"search\" data-jibp=\"h\" data-jiis=\"uc\">\n<div data-ved=\"0ahUKEwjO8Zvd9urJAhXDVRQKHb_fA0cQGggc\">\n<div id=\"ires\" data-async-context=\"query:translator\">\n<div class=\"g tpo knavi obcontainer mod\" data-md=\"77\" data-ved=\"0ahUKEwjO8Zvd9urJAhXDVRQKHb_fA0cQkCkIHSgAMAA\">\n<div data-hveid=\"30\">\n<div id=\"tw-container\" class=\"vk_c r-iL5CUcEBYY4w tw-reflow\" data-exp=\"1\" data-nnttsvi=\"1\" data-rf=\"1\" data-sm=\"1\" data-uilc=\"it\" data-ulf=\"1\">\n<div id=\"uid_0\" class=\"r-iJiBDsnVrxF8 xpdbox xpdopen\" data-kxi=\"1\">\n<div class=\"vk_bk\">\n<div id=\"tw-ob\">\n<div class=\"_Ejb\">\n<div id=\"tw-target\">\n<div id=\"tw-target-text-container\" class=\"tw-ta-container tw-nfl\">\n<p id=\"tw-target-text\" class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><span lang=\"en\">I believe that most of Emilia&#8217;s people (but probably they are not the only ones) can understand what is the real meaning of the expression: <strong><em>&#8220;g<\/em><em>randma&#8217;s Tortellini&#8221;.\u00a0<\/em><\/strong>It is a sentence that instantly evokes the <strong>concepts of family and tradition, which takes you back to your childhood, to those Sundays when you went to your\u00a0grandma&#8217;s house. <\/strong><\/span><\/p>\n<p class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><span lang=\"en\"><em><strong>In Modena Tortellini are a typical food for Christmas <\/strong><\/em>even if\u00a0they are prepared and eaten all the year.<br \/>\nBecause of it&#8217;s almost\u00a0Christmas, I want to write down\u00a0my grandmother&#8217;s recipe.<br \/>\nMaybe you would like\u00a0to try it at home or you simply would like to listen to this beautiful story \ud83d\ude42<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"srg\">\n<h2 class=\"g\">The origin of\u00a0Tortellini<\/h2>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<p id=\"tw-target-text\" class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><span lang=\"en\">For those who ignored it, even if it seems me impossible, <strong>Tortellini are a stuffed egg pasta typical of Modena and Bologna.<\/strong><\/span><\/p>\n<p><a href=\"https:\/\/en.wikipedia.org\/wiki\/Tortellini\" target=\"_blank\" rel=\"noopener\">As Wikipedia\u00a0explains<\/a>, the\u00a0<span lang=\"en\">origin of Tortellini is obscure and their paternity is still disputed between the two cities.<br \/>\nThe most credited place for the birth of Tortellini is the village of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Castelfranco_Emilia\" target=\"_blank\" rel=\"noopener\">Castelfranco Emilia <\/a>(since 1929 inside Modena&#8217;s province), on the Emilia Street, halfway between Modena and Bologna, which annually in September organizes the <em>&#8220;Tortellini festival&#8221;<\/em>, with the motivation of being their\u00a0birthplace.<\/span><\/p>\n<p id=\"tw-target-text\" class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><span lang=\"en\">One of the legends about the origin of Tortellino tells that it was a host of Castelfranco Emilia, owner of the <em>Corona Inn<\/em>, who invented this special food. The man, peeking through the keyhole of the room of a noblewoman who was his guest, was so much fascinated by the beauty of her belly\u00a0that he wants to re-make it in a culinary version. Today, there is a bronze statue that celebrates this legend in Aldo Moro square, in Castelfranco Emilia.<\/span><\/p>\n<p class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><a href=\"http:\/\/www.comune.castelfranco-emilia.mo.gov.it\/servizi\/Menu\/dinamica.aspx?idSezione=616&amp;idArea=17077&amp;idCat=17089&amp;ID=18060&amp;TipoElemento=categoria\" target=\"_blank\" rel=\"noopener\">You can read the recipe of the traditional Tortellini from\u00a0Castelfranco also\u00a0on the site of the town<\/a>, but now I&#8217;ll tell you how I made\u00a0Tortellini with my grandma and my mom.<\/p>\n<h2>My grandma&#8217;s Tortellini recipe<\/h2>\n<p>In my mother&#8217;s recipes book it is written&#8230;<\/p>\n<p>The recipe is for 2.5 kg of Tortellini (in Modena it seems than less than 10\/12 eggs it&#8217;s impossible to start anything \ud83d\ude09 )<\/p>\n<p><strong><em>Ingredients for egg-pasta:<\/em><\/strong><\/p>\n<ul>\n<li>1o eggs<\/li>\n<li>1 hg of\u00a0flour for each egg<br \/>\n(the size of eggs appear to be relevant, bigger the egg is and more you have to add flour in order to obtain a soft dough * )<br \/>\n( * ) The big &#8220;<em>rezdore&#8217;s&#8221;\u00a0<\/em>books\u00a0are not very scientific in general, I really believe that without the <em>rezdora<\/em>\u00a0they work less ; )<\/li>\n<\/ul>\n<p><strong><em>Ingredients for the stuffing:<\/em><\/strong><\/p>\n<ul>\n<li>3 hg\u00a0of minced <a href=\"https:\/\/en.wikipedia.org\/wiki\/Prosciutto\" target=\"_blank\" rel=\"noopener\">Prosciutto<\/a><\/li>\n<li>1 hg\u00a0of minced <a href=\"https:\/\/en.wikipedia.org\/wiki\/Mortadella\" target=\"_blank\" rel=\"noopener\">Mortadella<\/a><br \/>\n(make you prepared them together by your\u00a0trusty butcher)<\/li>\n<li>4 hg minced Pork<\/li>\n<li>10-20 gr.\u00a0of butter<\/li>\n<li>1 egg<\/li>\n<li>grated\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Parmigiano-Reggiano\" target=\"_blank\" rel=\"noopener\">Parmesan cheese<\/a><\/li>\n<li>salt\u00a0and pepper<\/li>\n<li>nutmeg<\/li>\n<\/ul>\n<h3><strong>How to cook Tortellini: the\u00a0stuffing<\/strong><\/h3>\n<p>Cook the minced pork with the butter until it become brow. Let it become cool. Now, put in the center of each square of dough some stuffing.<br \/>\nYou are ready to close Tortellini&#8230; bend the square for the diagonal turning it into a triangle. Make its edges join together.<br \/>\n<\/span><span lang=\"en\">After tightening the corners of the longest side\u00a0between the thumb and forefinger of both hands, rotate the triangle of dough around the index of the left hand with the right hand. My mom and my grandmother go like two trains&#8230; me&#8230; I&#8217;m not so fast, but my shapes are fine.
