The first that comes to my mind when I think about Modena is\u00a0<strong><em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Tigella\" target=\"_blank\" rel=\"noopener\">&#8220;tigella&#8221;<\/a>, <\/em><\/strong>but there are other &#8220;modenese&#8221; street foods, however, whose I&#8217;ll tell you in other posts (I have already ready another nice story! ; ) ).<\/p>\n<h2><strong>What are the origins of the &#8220;tigella&#8221; and how did it become the protagonist of the modenese street food?<\/strong><\/h2>\n<p class=\"p1\"><em><a href=\"http:\/\/www.mymodenadiary.it\/en\/friends\/\" target=\"_blank\" rel=\"noopener\">Francesca<\/a>,<\/em> in the article titled &#8220;<a href=\"http:\/\/www.mymodenadiary.it\/en\/tigella-is-state-of-mind\/\" target=\"_blank\" rel=\"noopener\"><em><strong>Tigella is a state of mind&#8221;<\/strong><\/em><\/a>, has already explained you why this preparation is so special for\u00a0Modena people and how to prepare it, so now I don&#8217;t want to propose you the recipe again but I want to talk, first of all, about its origin and how the\u00a0approach to its consumption\u00a0has changed over time.<\/p>\n<p>Thanks to what <em>Mauro<\/em>, the owner of <em>Or-ma, a Tigella Shop<\/em>\u00a0in Modena, told me I&#8217;ve realized that this traditional modenese food is adapting to the most recent food trends.\u00a0<span lang=\"en\"><em><strong>Tigelle<\/strong><\/em> are usually\u00a0consumed as a main dish, sitting at restaurant tables. However, especially in these last years many <em><strong>Tigella shops called \u00a0&#8220;tigellerie&#8221; or &#8220;crescenterie&#8221; <\/strong><\/em>are born. Here you can buy not only stuffed tigelles, but also empty ones, cooked or not, that you can take home, freeze and eat in the following days.\u00a0<\/span><\/p>\n<p id=\"tw-target-text\" class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\"><span lang=\"en\"><em>Or-ma<\/em> is one of these Tigella Shops. It&#8217;s located in <em>Gallucci street<\/em>, in the center of Modena, and from 2012 it&#8217;s managed by <em>Mauro Salvatori and Orbella Guaitoli <\/em>(<em>Or-ma<\/em> comes in fact from the first letters of their names).<br \/>\nMy friend brought me there and I\u00a0was very pleased to try their <em>tigelles!<\/em><\/span><\/p>\n<p class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\">I talked long with\u00a0Mauro about <em>tigelles<\/em> preparation. This special food comes from mountains, precisely from Modena\u00a0Apennines.<br \/>\nMauro showed me the <em>true tigella<\/em>, the disks traditionally\u00a0made of terracotta that serve to prepare <em>&#8220;crescentine&#8221;<\/em>, the real name of this food.<br \/>\nIt&#8217;s from the name\u00a0of these disks that derives\u00a0the name <strong>&#8220;<em>tigella&#8221;<\/em>\u00a0<\/strong>that\u00a0we frequently use to indicate this special bread.<br \/>\nHistorically, these disks were put on the embers in the morning in order to get ready for lunch. Mauro explained me that today the possibility to combine many tastes in the filling is a kind of contamination that goes away\u00a0a little bit from the tradition but that has given <em>Tigella Shops<\/em>\u00a0the possibility to satisfy the needs of new consumers,\u00a0giving a &#8220;youngest&#8221; style. <\/span><\/p>\n<p class=\"tw-data-text vk_txt tw-ta tw-text-small\" dir=\"ltr\" data-placeholder=\"Traduzione\">Nowadays, tastes like tuna and corned beef, for example, are very much appreciated. This would have been unthinkable in the past.<br \/>\nMauro has even told me that one Japanese\u00a0client falls in\u00a0love with the combination of salmon, rocket\u00a0and mushrooms!<\/p>\n<p class=\"p1\"><span class=\"s1\"><a href=\"http:\/\/www.mymodenadiary.it\/wp-content\/uploads\/2016\/01\/Orma_Tigella_MyModenaDiary_010.jpg\" rel=\"attachment wp-att-1333\" target=\"_blank\" rel=\"noopener\">&#8220;panino&#8221;<\/a>\u00a0and this is not so obvious for modenese people.<\/span><\/span><\/span><span class=\"s1\"><span class=\"s1\"><span class=\"s1\"><br \/>\n<\/span><\/span><\/span><span lang=\"en\">Classical or with wholemeal pasta, small or large (<em>&#8220;the Tigellone&#8221;<\/em>, a big tigella) <strong>&#8220;<em>it is always the right time to have a<\/em> <em>good tigella to share with your friends&#8221;.<\/em><\/strong><\/span><\/p>\n<p class=\"p1\"><a
